Garbanzo Bean Salad
From Food Smart Colorado
1 can of garbanzo beans (15 oz), rinsed and drained OR 15 oz of cooked garbanzo Beans
½ cup of chopped celery
1 tbsp of diced onion
1 apple, cored and chopped
¼ cup of chopped walnuts
1 tbsp of honey
1 tsp of lemon juice
½ tsp of mustard
¼ cup of mayonnaise or plain yogurt
Romaine or iceberg lettuce leaves, to serve (optional)
- Mix all the ingredients together.
- Serve in lettuce leaves, on bread, or with crackers (optional).
